Rendering

Rendering cooks animal tissue under pressure to separate water, fat (tallow), and solid protein matter. The protein matter is dried and ground into meal — chicken meal, beef meal, salmon meal, etc. Rendering is the standard industrial process for producing concentrated animal proteins for pet food. Quality depends on source material: rendering plants that take only specific source species ("chicken meal") produce identifiable ingredients; mixed renderers produce "meat meal" or "animal by-product meal."
